Role Objective
The Quality Manager will be responsible for establishing, implementing, and
controlling food safety and quality systems at Desi Cooks to ensure that all raw
materials, in-process products, and finished goods meet company standards,
customer specifications, and statutory requirements.
The role demands strong hands-on knowledge of frozen foods, potato processing,
audits, and compliance, with a focus on continuous improvement and zero-
defect manufacturing.
Key Responsibilities
1. Quality Systems & Compliance
Implement, monitor, and continuously improve HACCP, GMP, GHP, SOPs,
SSOPs
Ensure full compliance with FSSAI, ISO 22000, BRCGS, Halal standards
Independently handle internal, external, customer, and regulatory audits
Maintain complete quality documentation, records, and traceability systems
2. Incoming & Raw Material Quality Control
Approve and monitor potatoes, edible oil, ingredients, spices, coatings,
and packaging materials
Strong knowledge of potato varieties for processing, solids %, sugar levels,
fry colour, size, defects, and storage conditions
Define and enforce raw material quality parameters
Coordinate with Purchase, Stores, and Vendors for supplier quality issues
and CAPA
3. In-Process Quality Control
Monitor and control critical processing parameters:
o Blanching
o Frying
o IQF Freezing
o Packing & Metal Detection
Identify and control CCPs (Critical Control Points) and critical limits
Ensure proper sampling plans, testing frequency, and documentation
Reduce wastage, rejections, and deviations through strong process control
4. Finished Goods Quality Assurance
Ensure finished products meet:
o Sensory standards
o Physical & chemical parameters
o Microbiological standards
Final approval and release of finished goods for dispatch
Handle customer complaints, conduct RCA, and implement CAPA
5. Laboratory & Testing Management
Manage in-house laboratory activities:
o Oil quality & TPM testing
o Moisture, colour, solids, and sensory evaluation
Coordinate testing with NABL-approved external laboratories
Ensure calibration and validation of all lab instruments
6. Team Management & Training
Lead QA/QC executives, supervisors, and operators
Conduct regular food safety, hygiene, GMP, and SOP training
Ensure discipline, hygiene compliance, and shop-floor control
Develop team capability aligned with audit and export requirements
7. Continuous Improvement & R&D Support
Analyze quality data, trends, and rejection reports
Drive improvement initiatives for:
o Yield optimization
o Shelf life enhancement
o Food safety robustness
Support R&D trials, new product development, and process validation
